CABBAGE MANCHURIAN Ingredients : 1. Cabbage – grated – 2cups 2. Onion – finely chopped – 1/2cup 3. Capsicum – finely chopped – 3tbs 4. Ginger – finely chopped – 1tsp 5. Garlic – finely chopped – 1tsp 6. Green Chilli – finely chopped - 1pcs 7. Ginger-Garlic Paste – 1tsp 8. Spring Onion – finely chopped – 2tbs 9. Tomato Sauce – 2tbs 10. Soya Sauce – 2tbs 11. White Vinegar – 1tsp 12. Red chilli Powder – 1tsp 13. Black Pepper Powder – 1/2tsp 14. All Purpose Flour – 3tbs 15. Corn Flour – 3tbs 16. Salt to taste 17. Oil – for deep frying the pakodas/fritters and 2tbs to make the gravy (any veg oil) Preparations : At first, you need to make the cabbage pakodas/fritters. So to make the pakodas, squeeze the excess water from the grated cabbage and keep it on a separate bowl. KACHKI MACHH IN MICROWAVE Ingredients : 1. Kachki fish – 250gms 2. Onion – fine slices – 1cup 3. Ginger – finely chopped – 1tbs 4. Garlic – finely chopped – 1tbs 5. Tomato – finely chopped – 1-2tbs 6. Green Chilli Slits - 3-4pcs 7. Turmeric Powder – 1tsp 8. Red Chilli Powder – 1tsp 9. Cumin Powder – 1tsp 10. Salt to taste 11. Oil – Mustard Oil – 2-tsp  Preparations : Clean the fish really well, strain extra water and keep it in a microwave safe bowl. Now add all the ingredients mentioned above, one by one with the fish and mix gently as Kachki fish is very delicate. After mixing the ingredients, cover the bowl with a plate/lid (lid must have vent). Cooking Steps : Put the bowl in the microwave and cook it for 10mins. RAJMA MASALA (RED KIDNEY BEANS CURRY) Ingredients : 1. Rajma/Kidney Beans – 1cup 2. Onion – finely chopped – 1cup 3. Ginger – grated – 1tsp + Julienne cut ginger – few slices 4. Garlic – grated – 1tsp 5. Green Chilli – 2pcs – cut into halves 6. Tomato – finely chopped – 1/2cup 7. Tomato Sauce – 2tbs (optional) 8. Cumin Seeds – 1tsp 9. Cumin Powder – 1tsp 10. Coriander Powder – 1tsp 11. Turmeric Powder – 1tsp 12. Red Chilli Powder – 1/2tsp 13. Garam Masala Powder- 1/2tsp 14. Coriander Leaves – finely chopped – 1/2cup 15. Butter – 2tsp 16. BASANTI PULAO (VEG PULAU) Ingredients : 1. Gobindo Bhog Rice/Kalijeera Rice – 1cup 2. Ginger Paste - 1tsp 3. Cashew Nuts – 1/3cup 4. Raisins – 1/3cup 5. Bay Leaves – 2pcs 6. Green Cardamom – 3-4pcs 7. Cloves – 3-4 pcs 8. Cinnamon Sticks - 1inch 9. Turmeric Powder – 1/2tsp 10. Red Chilli Powder – 1/2tsp 11. Garam Masala Powder – 1/2tsp 12. Ghee/Clarified Butter – 2tbs 13. Sugar – 2tsp 14. Salt to taste Preparations : Wash the rice and soak it into the water for 30mins. After 30mins, strain the water and marinate the soaked rice with turmeric powder, red chilli powder, garam masala powder, ginger paste, salt and 1tbs of ghee. Keep it aside for another 30mins. MOONG DAAL PAKODA (LENTIL FRITTERS) Ingredients : 1. Moong Daal – 1/2cup – semi boiled (70%) 2. Potato – 1med size – boiled 3. Green Chilli – 3pcs – chopped 4. Grated Coconut – 3tbs (optional) 5. Coriander Leaves – finely chopped – 3tbs 6. Cornflour – 2-3tbs 7. Turmeric Powder – 1tsp 8. Cumin Powder – 1tsp 9. Aamchur Powder (Dried mango powder) – 1tsp 10. Sugar – 1tsp 11. Salt to taste 12. Oil – for deep frying – any veg oil Preparation : All you need to do is to mix all the ingredients, apart from oil, make a nice and thick mixture, so that you can easily make pakodas/balls from it. Cooking Steps : Heat generous amount of oil in a deep fry pan and let it be heated up properly. BREAD PIZZA ON TAWA Ingredients : 1. Bread Slices – 4pcs 2. Cheese (preferably Mozzarella) – grated – 100gms 3. Onion – finely chopped – 1medium size 4. Bellpeppers – finely chopped – 1medium size 5. Jalapeno – sliced – 1pcs 6. Pizza Sauce – 4tbs 7. Mixed Italian Herbs – 1/2tsp 8. Oregano – 1/2tsp 9. Chilli Flakes 1/2tsp 10. Salt to taste Preparation : In a bowl, mix all the chopped ingredients and mix all the herbs along with little salt. Keep this aside. Take a non-stick pan and switch on the flame to make the pan heated up. Now take a bread slice (I have used brown bread, but you can try white bread also) and apply 1tbs of pizza sauce on it. Add the above mixture and spread it evenly on the bread slice. Add jalapeno slices and also add a generous amount of grated cheese. GOBI MATAR (CAULIFLOWER WITH GREEN PEAS CURRY) (Completely Veg) Ingredients : 1. Cauliflower – 1pcs (about 400-500gms) 2. Green Peas – 1cup 3. Tomato – 2pcs (big) 4. Green Chilli – 2pcs 5. Ginger – 1inch 6. Cashew Nuts – 12-15pcs 7. Turmeric Powder – 1tsp 8. Red Chilli Powder – 1/2tsp 9. Coriander Powder – 1tsp 10. Garam Masala Powder – 1/2tsp 11. Dry Fenugreek Leaves/Kasuri Methi – 1tsp 12. Whole Dry Red Chilli – 1pcs 13. Coriander Leaves/Cilantro – Chopped -2tbs 14. Sugar – 1tsp 15. Salt to taste 16. Oil – 2tbs (any veg oil) Preparation : Cut out the florets of the cauliflower, wash them well. Then semi-boil the cauliflower and green peas together (boil them 80% only). After this, strain the florets and green peas and keep it aside. In a blender/mixer, put chopped tomatoes, ginger, green chilli and cashew nuts and blend these to a smooth paste. CHHANAR CAKE/CHHANA PODA (BROKEN MILK CAKE)   Ingredients : 1. Fresh Chhana/Chhena/Broken Milk – 2cups 2. Sugar (granulated) – 1cup 3. Semolina/Sooji – 2tbs 4. Ghee/Clarified Butter – 1tbs 5. Cardamom Powder – 1tsp 6. Raisins – 1-2tbs 7. Almonds – thinely sliced – 1tbs Preparation : Preheat your oven at 180degree Celsius/356degree Fahrenheit. Take the chhana/chhena in a plate and start mashing it really well, so that it won't have any lumps. Add the sugar and mash again. At this point, you will notice that the mixture is getting little wet because of sugar, but that is ok, keep mashing. If you notice that your mixture is looking more like a dough and not like a cake batter, you can add 1-2tbs of water into this. Add semolina/sooji, cardamom powder, ghee/clarified butter and mix these. Finally add raisins and almonds and mix. Grease a baking pan with little ghee and pour the above mixture into the pan. APPLE BARFI Ingredients : 1. Apple – 2pcs 2. Sugar – 1cup ... 3. Coconut Powder – 1cup (or you can also use freshly grated coconut) 4. Lime Juice – 1tsp 5. Cardamom Powder – 1tsp 6. Dry Fruits – Almonds-Raisins – chopped 1/8cup Preparation : First, peel the skin of the apples and chop them roughly. Add lime juice into these chopped apples so that it would not change its colour completely. Cooking Steps : Place a pan on the oven and switch on the flame. Add sugar and coconut powder and keep stirring over medium flame until the sugar melts. When the coconut starts changing its colour, add chopped apples into the pan and mix it well. Cook it over medium to medium-high heat till the apples get softened (about 15mins). But keep stirring otherwise it could get burned from the bottom.
