GOBI MATAR
(CAULIFLOWER WITH GREEN PEAS CURRY)
(Completely Veg)



Ingredients :
1. Cauliflower – 1pcs (about 400-500gms)
2. Green Peas – 1cup
3. Tomato – 2pcs (big)
4. Green Chilli – 2pcs
5. Ginger – 1inch
6. Cashew Nuts – 12-15pcs
7. Turmeric Powder – 1tsp
8. Red Chilli Powder – 1/2tsp
9. Coriander Powder – 1tsp
10. Garam Masala Powder – 1/2tsp
11. Dry Fenugreek Leaves/Kasuri Methi – 1tsp
12. Whole Dry Red Chilli – 1pcs
13. Coriander Leaves/Cilantro – Chopped -2tbs
14. Sugar – 1tsp
15. Salt to taste
16. Oil – 2tbs (any veg oil)


Preparation :
Cut out the florets of the cauliflower, wash them well. Then semi-boil the cauliflower and green peas together (boil them 80% only). After this, strain the florets and green peas and keep it aside.

In a blender/mixer, put chopped tomatoes, ginger, green chilli and cashew nuts and blend these to a smooth paste.

Cooking Steps :
Heat up a pan. Add oil. Add the whole dry red chilli and cumin seeds and let it fry for few seconds. Now add the dry spices one by one – coriander powder, turmeric powder, red chilli powder and saute over a low flame for next 5-7seconds. Add the blended tomato mixture into this and cook over medium to medium high heat until oil starts floating on the surface. Then add kasuri methi/dry fenugreek leaves, salt and sugar and mix it well. Add semi boiled cauliflower and green peas into this gravy, add 1cup water, cover with a lid and let it cook for next 2-3mins over a medium heat. After this time, add garam masala powder and coriander leaves and serve it.


Serving Suggestion :
This recipe is a very quick and easy too. You can enjoy this tasty dish with any kind of roti/paratha, or even with rice also.
