Rajma Masala - Indian Spicy Veg Recipe
RAJMA MASALA
(RED KIDNEY BEANS CURRY)
(RED KIDNEY BEANS CURRY)
Ingredients :
1. Rajma/Kidney Beans – 1cup
2. Onion – finely chopped – 1cup
3. Ginger – grated – 1tsp + Julienne cut ginger – few slices
4. Garlic – grated – 1tsp
5. Green Chilli – 2pcs – cut into halves
6. Tomato – finely chopped – 1/2cup
7. Tomato Sauce – 2tbs (optional)
8. Cumin Seeds – 1tsp
9. Cumin Powder – 1tsp
10. Coriander Powder – 1tsp
11. Turmeric Powder – 1tsp
12. Red Chilli Powder – 1/2tsp
13. Garam Masala Powder- 1/2tsp
14. Coriander Leaves – finely chopped – 1/2cup
15. Butter – 2tsp
16. Oil – 2tbs (any veg oil)
Preparations :
Soak the rajma/kidney beans for 7-8hrs. Then cook it in a pressure cooker by adding some salt, little bit of turmeric powder, some crushed ginger-garlic - only for 1 whistle. Switch off the flame and let the pressure goes by itself. (Do not through away the rajma stock as you can use it in the making of rajma-garvy. It will enhance the taste of your dish).
Cooking Steps :
On a hot frying pan, add oil, then cumin seeds and let it fry for few seconds. Add grated ginger-garlic and saute for next ten seconds (but don't let it burn). Now turmeric powder and red chilli powder and saute this too for 5-7seconds over low flame. Add onion and fry over medium flame till became golden brown in colour. Then add tomatoes, mix and cover the pan and let the tomatoes become tender. After 1-1½ mins remove the lid and add cumin powder, coriander powder, tomato sauce and cook it over medium flame till oil gets separated from the spices. Now you can add the rajma stock (the same water, in which you have boiled the rajma) – 1 ½ cup and add boiled rajma, julienne cut ginger, green chilli and salt too. Mix well, cover the pan again and cook it over medium flame for next 2-3mins. After 2-3mins add garam masala powder, coriander leaves and butter. Your Rajma Masala is ready to serve now.
Serving Suggestion :
This is a very popular dish in northern side of India. This is super tasty and super spicy recipe and goes best with rice, pulao or paratha/roti as well.
