Basanti Pulao - Indian / Bengali Veg Recipe

Ingredients :
1. Gobindo Bhog Rice/Kalijeera Rice – 1cup
2. Ginger Paste - 1tsp
3. Cashew Nuts – 1/3cup
4. Raisins – 1/3cup
5. Bay Leaves – 2pcs
6. Green Cardamom – 3-4pcs
7. Cloves – 3-4 pcs
8. Cinnamon Sticks - 1inch
9. Turmeric Powder – 1/2tsp
10. Red Chilli Powder – 1/2tsp
11. Garam Masala Powder – 1/2tsp
12. Ghee/Clarified Butter – 2tbs
13. Sugar – 2tsp
14. Salt to taste
Preparations :
Wash the rice and soak it into the water for 30mins.
After 30mins, strain the water and marinate the soaked rice with turmeric powder, red chilli powder, garam masala powder, ginger paste, salt and 1tbs of ghee. Keep it aside for another 30mins.
Cooking Steps :
Place a pan on the oven and turn the flame on. Add remaining ghee. After ghee melts, add green cardamoms, cloves, cinnamon sticks and bay leaves and fry for few seconds. Now add the cashew nuts and raisins and fry for a while till it gets light golden colour. Then add the marinated rice and fry it too for 1-1/2mins over a med flame. Now add 2cups of water (preferably warm water) and cover the pan and let it cook over med flame till the rice is almost done (10mins). After 10mins, open the lid, add sugar, mix with the rice, then cover the pan again and cook it for another 5mins.
After this time duration, you will be able to transfer the rice into the serving platter.
Serving Suggestion :
This is a very easy and tasty preparation of rice. You can have it with any kind of curry of your choice.
