Fish Fry

Ingredients : 1. Boneless Fish Fillets – 6 pcs 2. Lemon Juice – 2 tsp 3. Onion – ½ pcs small 4. Garlic – 2 cloves 5. Ginger – ½ inch 6. Coriander Leaves – 2 tbsp 7. Green Chili – 1 pc 8. Egg – 2 pcs 9. Bread Crumbs – as much required 10. Black Pepper Powder – ½ tsp 11. Salt to taste 12. Oil – for deep frying Preparations : Clean the fish fillets well. Add lemon juice and salt into the fillets, rub and keep it aside for 15 mins. Make a paste of onion, ginger, garlic, green chili and coriander leaves. Add this paste into the fillets and marinade with this at least for 15 mins. In a bowl, whisk the eggs with salt and pepper powder. Another plate spread bread crumbs. Chicken in Cashew & Peanut Gravy (Badam Murg)

Ingredients : 1. Chicken – 500gms 2. Onion – 1pc big – chopped 3. Cashew Nut – 8-10pcs 4. Roasted Peanut – 10-12pcs 5. Poppy Seeds – 1tbs 6. Curd – 3tbs 7. Milk – 1/2cup 8. Ginger -Garlic Paste – 1tbs 9. Black Pepper Powder – 1tsp 10. Salt to taste 11. Sugar – 1/4tsp (optional) 12. Butter – 1tbs 13. Oil – 1tbs Preparation : Wash the chicken, drain excess water and marinate with some salt, black pepper powder, ginger-garlic paste and curd. Keep it marinated for 30mins. In a fry pan add some oil and add chopped onion, fry until become brown. Then make a paste of this fried onion. Keep aside. Make a smooth paste of poppy seeds, cashew nuts, peanuts as well. Ingredients : 1. Shrimp/Chingri Mach – 250-300gms 2. Onion – 1pc big – chopped 3. Tomato – 1pc big – chopped 4. Green Chilli – 2-3pcs 5. Ginger Paste – 1/2tsp 6. Garlic Paste – 1/2tsp 7. Turmeric Powder – 1tsp 8. Kashmiri Red Chilli Powder – 1tsp 9. Cumin Powder – 1/2tsp 10. Garam Masala Powder – 1/2tsp 11. Coconut Milk – 1cup 12. Bay Leaf – 1pc 13. Whole Dry Red Chilli – 1pc 14. Whole Garam Masala – Green Cardamom – 3pcs, Cloves – 3-4pcs, Cinnamon Stick – 1inch 15. Sugar – 1/2tsp 16. Salt to taste 17. Ghee/Clarified Butter – 1tsp 18. Ingredients : 1. Lamb – 5oo - 600gms 2. Potato – 2pcs big – peeled and cut into halves (Potato is optional) 3. Onion – 1pc big – finely chopped 4. Tomato – 1pc big – chopped 5. Green Chilli – 2-3pcs 6. Curd – 2tbs 7. Ginger-Garlic Paste – 2tbs 8. Cumin Powder – 2tsp 9. Coriander Powder – 2tsp 10. Turmeric Powder – 2tsp 11. Kancha Golla (Broken Milk Dessert)

Ingredients : 1. Chena/ Chhana/ Broken Milk – 1 cup 2. Date Palm Jaggery – 75grm (If jaggery is not available, you can use 1/2cup of sugar) 3. Ghee/ Clarified Butter – 1tsp 4. Cardamom Powder – 1/4tsp Preparation : Make nice chena/ broken milk from 1/2lt of milk, strain excess water. Take this chena into a plate and knead it well until soft (for 2mins) Cooking Steps : In a heavy bottom fry pan, add ghee, add the chh ❤️ ❤️ ❤️ 👌 ena, stir over low-medium heat. Add grated jaggery/sugar, mix, stir continuously over low-medium heat. After 2-3mins, the chhena will become like a soft dough (do not make it very dry), switch off the heat and transfer this into a plate. Let it become cool down. When the chhena is cool down, take small portion from it and start making small balls from it. You can also garnish it with some powdered pistachios or cherries.
