Chingri Malaikari (Shrimp / Prawn in Coconut Milk)
Ingredients :
1. Shrimp/Chingri Mach – 250-300gms
2. Onion – 1pc big – chopped
3. Tomato – 1pc big – chopped
4. Green Chilli – 2-3pcs
5. Ginger Paste – 1/2tsp
6. Garlic Paste – 1/2tsp
7. Turmeric Powder – 1tsp
8. Kashmiri Red Chilli Powder – 1tsp
9. Cumin Powder – 1/2tsp
10. Garam Masala Powder – 1/2tsp
11. Coconut Milk – 1cup
12. Bay Leaf – 1pc
13. Whole Dry Red Chilli – 1pc
14. Whole Garam Masala – Green Cardamom – 3pcs, Cloves – 3-4pcs, Cinnamon Stick – 1inch
15. Sugar – 1/2tsp
16. Salt to taste
17. Ghee/Clarified Butter – 1tsp
18. Oil – 4-5tbs of Mustard Oil

Preparations :
Clean the shrimp very well, deveined it carefully, wash in running water and remove excess water. Marinate the fish with some salt and 1/2tsp of turmeric powder, mix well, keep it aside for 10-15 mins.

Cooking Steps :
Heat up a fry pan, add mustard oil, let it become hot, then add the marinated shrimp/chingri mach. Fry it for only 1min from all the sides over medium high heat. Take out in a separate bowl.
Now add all the temperings – whole dry red chilli, green cardamoms, cloves, cinnamon stick and bay leaf, let it fry for few seeconds. Add chopped onion, fry until gets light golden colour over medium heat. Then add chopped tomato and a pinch of salt (to tenderize the tomato faster), mix, cover with lid and let it cook for 1-2mins. Then uncover the lid, add ginger paste, garlic paste and saute it for 1min. now add add the dry spices – 1/2tsp turmeric powder, kashmiri red chilli powder, cumin powder and 2tbs of water, fry it for 1-2min or until oil gets separated from the spices. Add the fried shrimp/chingri mach, mix with the spices, fry for 1min over medium heat. Then reduce the heat to the lowest and add coconut milk (to prevent the milk get curdeled). Add salt, sugar, mix, turn the heat on high, when starts to boil, cover with a lid, cook it for 5-6mins over low to medium heat. Finally, add garam masala powder and ghee, mix and it will be ready to be served.
