Lamb Curry




Ingredients :
1. Lamb – 5oo - 600gms
2. Potato – 2pcs big – peeled and cut into halves (Potato is optional)
3. Onion – 1pc big – finely chopped
4. Tomato – 1pc big – chopped
5. Green Chilli – 2-3pcs
6. Curd – 2tbs
7. Ginger-Garlic Paste – 2tbs
8. Cumin Powder – 2tsp
9. Coriander Powder – 2tsp
10. Turmeric Powder – 2tsp
11. Kashmiri Red Chilli Powder – 2tsp (or as per your choice of spice level)
12. Garam Masala Powder – 1/2tsp
13. Cumin Seeds – 1tsp
14. Bay Leaf – 1pc
15. Salt to taste
16. Oil – 5-6tbs

Preparations :
Wash the lamb pieces well, drain excess water.
In a bowl add curd, some salt and half of the ingredients no. 7 to ingredients no. 11. Mix and marinade the lamb with this. Keep it at least for 30mins.
Cooking Steps : Note : I made this lamb curry in a pressure cooker which takes less time.
In a fry pan, add 2tbs of oil and when oil is hot, add potato pieces. Sprinkle some salt and turmeric powder, fry it over medium to medium high heat until become lightly golden. Then transfer it into a bowl.
In the same pan, add remaining oil. Add cumin seeds and bay leaf, let it splutter for few seconds. Then add chopped onion and fry it over medium heat until become golden.
Once onion is golden, add chopped tomato, stir. Add remaining ingredients no. 7 to ingredients no. 11, saute for 2mins.
Add marinated lamb, turn the heat to medium high to high and cook it for 5-6mins until oil gets separated from the surface of the pan.
Transfer the lamb into the pressure cooker. Add some water (depending on how much gravy you want), green chillies, salt, mix. Cover the lid, let it cook for 7-8 whistles (depends on the quality of the meat) or until cooked 90%. Then turn off the heat, let the pressure settle down all by itself.
If you are cooking in a pan, cover with lid and cook over low heat until 90% cooked.
Uncover the lid, add fried potatoes and garam masala powder, mix and cover again and cook for another 1 whistle, then turn off the heat. When the pressure goes all by itself, you can remove the lid and lamb curry can be served then.
In fry pan, when lamb gets cooked 90%, add fried potatoes and garam masala powder, mix and cover. Cook over low heat for 5mins. Then it will be ready to be serve.

This is a spicy and amazing recipe of lamb, prepared with Indian spices and it tastes just fantastic, specially to the spice-lovers. Enjoy this with any kind of rice or Indian bread like paratha, naan, chapati or with pulao.
